Barley Minestrone

Ingredients
1 tbsp. olive oil
2 c. green cabbage
2 c. green cabbage
2 large carrots
2 large celery stalks
1 medium zucchini
1/2 lb. green beans
1 medium onion
1-2 clove garlic
4-5 cups chicken broth, vegetable broth, or water
1 can diced tomatoes
1 cup pearl barley
Salt & pepper to taste
Parmesan cheese
Pesto (optional)

Directions
1. Heat large pot over medium-high heat. Add barley and cook 3-4 minutes or until toasted and fragrant, stirring constantly. Transfer barley to small bowl; set aside.
2. Heat oil in same pot over medium-high heat. Add cabbage, carrots, celery, and onion; cook 8 to 10 minutes or until vegetables are tender and lightly browned, stirring occasionally. Add garlic and cook 30 seconds or until fragrant. Stir in barley, broth, tomatoes, and salt. Cover and heat to boiling over high heat. One boiling, reduce heat to low and simmer, covered, 25 minutes.
3. Stir in zucchini and beans. Simmer an additional 10-15 minutes, until all vegetables and barley are tender.
4. Garnish with grated cheese and pesto if desired.
